Tools Needed

  • 3-ounce ladle
  • 1/3 size pan 6” deep pan
  • #8 Disher
  • 6-ounce ladle
  • 1/9 size pan
  • ¼ size, 4-inch-deep microwavable pan

  • Bacon must reach internal temp of 145°F and maintain for 17seconds

Crumbled Sausage

  • Using a wire whisk, finely chop sausage patties in a 1/6 size pan
  • The chopped sausage pieces should be no larger than a pea
  • Portion chopped sausage into MPHC pan
  • Press 1-hour hold time
  • Discard any remaining sausage when the 1- hour timer sounds

Crumbled Bacon

  • Crumbled Bacon is held at room temperature in a 1/6 size 4“deep pan on the make up table
  • Crumbled bacon held at room temp must be marked with label to discard at end of day

Holding Hashbrowns

  • Place a ¼ size, 4’’ deep microwavable pan under thermoglo
  • Hold 5 regular cartons of hashbrowns in pan
  • Mark pan with 10-minute hold time

Prepared to order

  • Preparing Grit Bowl- Portion 2 scoops of grits into bowl
  • Preparing Hashbrown Bowl- Place carton of hashbrowns in bowl
  • Portion half a ladle of sausage gravy using the 6 oz. ladle (3 ounces)
  • Using #8 disher portion eggs over gravy
  • Use 2 oz. spoodle to portion a level scoop of crumbled sausage
  • Use teaspoon to portion 2 level scoops of crumbled bacon
  • Place lid on bowl

Preparing Bowl with Breakfast Chicken Fillet Substitution

Prepared to order

  • Guests can choose to select a Breakfast Chicken Fillet in place of sausage and bacon.
  • Prepare the bowl without sausage or bacon when using this substitution.
  • Use the yellow cutting board and a biscuit splitter to cut one Breakfast Chicken Fillet into ½-inch squares.
  • Portion the cut chicken evenly over the eggs and gravy in the bowl.
  • Place lid on bowl.
