Q.A. Standard: When removed from the cooler, bologna should have no off odor. Bologna should not feel slimy to the touch.

Tools Needed

  • Red perforated meat spatula
  • Biscuit splitter
  • Grill weight
  • 1/3 size 6” deep pan with lid
  • Red tongs
  • Grill scraper
  • Sharpie
  • Dissolvable labels

Always wear Food-Mitt gloves when handling raw meat

Thawing

  • Bologna arrives frozen and must thaw for 24 hours in the cooler before use.
  • Place bologna packs on a sheet pan to thaw.
  • Mark the pan with a dissolvable label with:
    • Name of Product
    • Prep Date/Time
    • Use by Date/Time
  • All bologna packs must stay on the labelled pan until ready to use on the line

Prepping & Holding

  • Once thawed, bologna can be held in a 1/3 size 6” deep pan with lid for 7 days.
  • Place lid on pan. Place a new dissolvable label on lid to mark product name, date prepped and discard date. Store in cooler.

Preparing & Holding

  • Always use two Food-Mitt gloves when handling raw meat
  • Place bologna on the grill
  • Up to 4 slices may be cooked under the grill weight at one time
  • Remove the Food-Mitt gloves by shaking them off your hands into a garbage can. Ensure you do not touch the gloves
  • Place the grill weight on the bologna
  • Start the 3-minute cook timer
  • When the duty timer sounds at 1½ minutes:
  • Remove grill weight
  • Use red perforated meat spatula to turn bologna
  • Replace grill weight
  • When final timer sounds:
  • Remove grill weight
  • Remove bologna from grill and place in a warming pan
  • Hold up to 10 slices per warming pan
  • Use a solid lid on the warming pan
  • Hold cooked bologna for up to 30 minutes in the product holding cabinet
  • Discard any remaining bologna after 30 minutes
  • Scrape grill to remove bologna residue

Serving Bologna Biscuit

  • Pull a special biscuit wrap and place on the sandwich board
  • Split 1 biscuit using a biscuit splitter
  • Place the heel of the biscuit in the center of the wrap
  • Using red tongs, place 1 slice of bologna on the heel
  • Place the crown of the biscuit on top of the bologna
  • Wrap using corner-to-corner sandwich wrap procedure
  • Mark wrapper “BOL”
  • Hold in sandwich holding bin (LTO slot) for up to 20 minutes

Bologna, Egg, and Cheese Biscuit

  • Pull a special biscuit wrap and place on the sandwich board
  • Split 1 biscuit using a biscuit splitter
  • Place the heel of the biscuit in the center of the wrap
  • Using red tongs, place 1 slice of bologna on the heel
  • Place 1 slice of cheese on top of bologna
  • Using yellow tongs, place 1 folded egg on top of cheese
  • Place the crown of the biscuit on top
  • Wrap biscuit as “Special” using the corner-to-corner sandwich wrap procedure

Big Breakfast Sandwich – Bologna

  • Prepare sandwiches to order
  • Always Wear single-use gloves
  • Place 2 slices of Texas toast on the bun toaster
  • Pull foil wrap down with “Special” facing away from you
  • Place 1 toasted slice (toasted side down) in the center of the foil
  • Using red tongs, place 2 slices of bologna, slightly overlapped, on the toast
  • Place 1 slice of American cheese on top of bologna
  • Using yellow tongs, place 1 folded egg on top of cheese
  • Remove second slice of toast and apply ¾ oz mayonnaise to the non-toasted side
  • Place mayo-side down on top of the egg
  • Skip any ingredient not ordered
  • Mark foil wrap “BOL” using a Sharpie

Side Order – Bologna

  • Dine In: Place 2 slices of bologna on a lined 3 lb. food tray – Serve on service tray with fork
  • Dine Out: Place 2 slices of bologna on a lined 3 lb. food tray – Place in a 6 lb. bag with logo facing up – Serve with fork and 2 napkins

Side Meat Choice – Deluxe Breakfast

  • Place 2 slices of bologna to the side of the scrambled eggs in the large section of a 3-compartment plate
