Dreamsicle Shake

Tools Needed

  • 2 Ice cream scoops
  • Ice cream spade
  • Mixer
  • 16/20 ounce cups
  • Domed lids
  • Giant red straws
  • 1/6 6inch pan

Worksafe

  • Wash hands before starting to work and after handling anything that is not food related to prevent contamination and health hazards.
  • Do not allow ice cream scoop handle to come in contact with ice cream.
  • Always wear disposable gloves when preparing or handling ready to eat food.
  • Do not handle drink cups around the top of the cup or the lip area.
  • Milk must maintain a temperature of 41°F or lower.

Receiving and Storing

  • Ice cream is received and stored at 0°F or lower in the walk-in freezer.
  • Sprite drink syrup is received and stored at 50°F- 70°F in the dry storage area.

Station Set-Up

  • Fill a cup ½ full of sanitizing solution.
  • Test the sanitizer solution every 30 minutes to ensure it is at the proper concentration.

Preparing Small and Regular Dreamsicle Shakes

  • Wash hands
  • Fill a cup to the red fill line with Sprite. (Small: 16 oz. cup – 6 oz. sprite; Regular: 20 oz. cup – 8 oz.
    sprite)
  • Small: First Place 1 scoop of vanilla ice cream and then 1 scoop of orange sherbet into the cup.
  • Regular: First Place 1.5 scoop of vanilla ice cream and then 1.5 scoop of orange sherbet into the cup.
  • Push the ice cream down into the cup until the Sprite is over the ice cream.
  • The Sprite should be ½ inch from the top of the cup.
  • Place a domed lid on the cup
  • Tilt the cup at a 45-degree angle and slide mixture onto the shaft of the mixer.
  • The shake mixer should be set to the medium setting.
  • Mix for 20 to 30 seconds or until all ice cream is thoroughly blended.
  • Do not over mix. This will cause the shake to be runny.
  • Pull the cup down as the mixer is slowing down at a 45-degree angle.
  • Ensure that the dome lid stays firmly seated on the cup.

Serving

  • Dine in – Place on tray or hand to customer with a giant red straw.
  • Dine out – Hand to customer along with a giant red straw.
  • Rinse stainless shaft and sanitize.
  • Sanitize mixer blades for 2 seconds after each use.
