Tools

Health & Safety

  • Wash hands before starting work and after handling anything not food related
  • If leaving workstation or changing tasks, wash hands & change gloves
  • Wash, rinse, sanitize all utensils & surfaces every 4 hours
  • Never thaw food at room temperature. Food must be thawed in the walk-in cooler at 34°F – 41°F.
  • Always wear Food-Mitt gloves when handling meatloaf.

Preparing Meatloaf

  • Meatloaf is received frozen and fully cooked.
  • Communicate with backline on how many meatloaf slices will be needed to prep.
  • Always use Food-Mitt gloves to take meatloaf slices to 1/6 4inch deep pan with deli liner
  • In a 1/6-size, 4-inch-deep pan, place 1 deli liner, then add 1 slice of meatloaf.
  • Repeat the layering process—1 deli liner followed by 1 slice of meatloaf—until the pan contains 4 deli liners and 4 total slices of meatloaf.
  • Maximum hold: 4 meatloaf slices per pan
  • Cover with solid lid and mark with a 24-thaw time
    • Example:
      • Pull date 08/11 8am
      • Ready by 08/12 8am
      • Discard 08/13 EOD
  • Place pan in cooler away from milk and eggs.
  • Once meatloaf has thawed, ensure dates are transferred ready date and discard date on dissolvable label placed on top of lid.
  • Place pan & lid on makeup table in LTO slot ensure meatloaf stays between 34°F-41°F.

Meatloaf Sandwich

  • All- Meatloaf sandwiches are prepared to order
  • Always wear single-use gloves when preparing sandwiches
  • When a sandwich is ordered, place a bun heel and crown cut side up on the bun toaster chain
  • Pull down the foil wrap with the word “Special” facing away from you
  • Remove deli liner with 1 slice of meatloaf from the makeup table
  • Place Deli liner and slice of meatloaf in microwave for press timer #6
  • Remove from deli liner from microwave use red tongs place the slice of meatloaf on the heel of the bun
  • Place one slice of American cheese on top of the meatloaf
  • Place the heel, meatloaf, cheese in the microwave
  • Press the appropriate timer button:
  • 1 sandwich Timer Button #1
  • 2 sandwiches Timer Button #2
  • Bring the crown down from the toaster
  • Apply ½ oz. mayonnaise using condiment spatula with a down and across motion
  • Apply ½ oz. ketchup using a teaspoon. Plop in center of crown. Use back of spoon to swirl to edge of bun.
  • When the timer sounds, remove the heel, meatloaf, cheese from the microwave
  • Place dressed crown on top of meatloaf
  • Wrap the meatloaf sandwich in foil wrap following the “Square” wrapping procedures
  • Use a sharpie marker to mark the sandwich “M”

Deluxe Southern Meatloaf Sandwich

  • All- Meatloaf sandwiches are prepared to order
  • Always wear single-use gloves when preparing sandwiches
  • When a sandwich is ordered, place a bun heel and crown cut side up on the bun toaster chain
  • Pull down the foil wrap with the word “Special” facing away from you
  • Remove deli liner with 1 slice of meatloaf from the makeup table
  • Place Deli liner and slice of meatloaf in microwave for press timer #6
  • Remove from deli liner from microwave use red tongs place the slice of meatloaf on the heel of the bun
  • Place one slice of American cheese on top of the meat patty
  • Place 4 half slices of bacon criss cross on top of the cheese
  • Place the heel, meatloaf, cheese, and bacon in the microwave
  • Press the appropriate timer button:
    • 1 sandwich Timer Button #1
    • 2 sandwiches Timer Button #2
  • Bring the crown down from the toaster
  • Apply ½ oz. mayonnaise using condiment spatula with a down and across motion
  • Apply ½ oz. ketchup using a teaspoon. Plop in center of crown. Use back of spoon to swirl to edge of bun.
  • Portion ½ oz. shredded lettuce on sandwich
  • Place 1 tomato slice on sandwich
  • When the timer sounds, remove the heel, meatloaf, cheese from the microwave
  • Place dressed crown on top of meatloaf
  • Wrap the meatloaf sandwich in foil wrap following the “Square” wrapping procedures
  • Use a sharpie marker to mark the sandwich “DM”

Meatloaf Plate

  • Using 2-ounce spoodle portion 2 ounces of mash potatoes in the large section of a 3-compartment plate or 3-compartment hinge container
  • Remove deli liner with 1 slice of meatloaf from the makeup table
  • Place Deli liner and slice of meatloaf in microwave for press timer #6
  • Use red tongs to place 1 slice of meatloaf in the large section of a 3- compartment plate or 3-compartment hinged container
  • Place the meatloaf in the middle of the mash potatoes for appearance purposes.
  • Portion 2 ounces of chicken gravy over the slice of meatloaf.
  • Place side items ordered in other two compartments
  • Dine in – Place biscuit beside the meatloaf. Place on serving tray with a fork and a knife.
  • Dine out – Cover food with a deli-liner. Place biscuit, a fork, knife, and 2 napkins on top of deli-liner. Close the lid and place in a plastic carry out bag.
