Work Safe

• Never thaw food at room temperature. It must be in the walk-in cooler at 34°F – 41°F.
• Ensure Cinnamon Rolls are stored on top shelf in reach-in cooler away from liquid eggs

Tools Needed

• 13 ½” rubber spatula
• Hinge container
• Sharpie

RECEIVING AND STORING

• Cinnamon rolls should be stored in the freezer at 0°F +/- 10°F.
• Cinnamon rolls must be placed in walk in cooler to thaw for a minimum of 48 hours
• Cinnamon rolls in walk in cooler can be held for 7 days

ROTATING

• When Cinnamon Rolls are rotated from the walk-in freezer to the walk-in cooler, use a sharpie marker to mark the top of the case with the following information:
• Pulled By Date/Time: Date & Time that it is removed from the walk-in freezer
• Ready By Date/Time: Exactly 48 hours from the pulled by date & time
• Use By date/Time: 7 days from the pulled by date & time
• See example below

Pulled by date/time:	11-1-25	8:00 A.M.
Ready by date/time:	11-3-25	8:00 A.M.
Use by date/time:	11-7-25	8:00 A.M.

PREPARING

• CINNAMON ROLLS SHOULD ALWAYS BE HEATED FROM A THAWED STATE
• Cinnamon rolls are prepackaged into the hinge container with deli liner. Transfer the hold time date to the bottom of the hinge container using a sharpie. (Number Only)
• Always wear single use gloves when preparing or handling ready to eat food
• Using the 13 ½” rubber spatula transfer cinnamon roll to hinge container with deli liner. Close the container.
• Store in cooler until ready to serve.
• Place the cinnamon roll(s) with deli liner inside the microwave.
• Close the microwave
• Press timer button
  • 1 Cinnamon Roll – Button 6
  • 2 Cinnamon Rolls – Button 7
• When the timer sounds, remove the cinnamon roll with deli liner
• BE CAREFUL THE CINNAMON ROLL IS VERY HOT

SERVING (Single)

• For dine-in place hinge container on a serving tray with a fork
• For dine-out place the hinge container into a 6 LB bag. Serve with a fork and one napkin

SERVING (1/2 Dozen)

• Place a deli liner in microwave
• Place 3 cinnamon rolls in microwave (spaced out)
• Hit button #8
• Remove cinnamon rolls (including deli liner) and place into a family box
• Repeat procedures for the next 3 cinnamon rolls
• Remove cinnamon rolls (including deli liner) and place into the family box
• Close box. Place into t-shirt bag. Serve with 6 forks and 6 napkins.
