QA Standard: Pancakes should be golden brown, with no gray coloring and no hard edges.
Tools Needed
- Squeeze bottle
- 1/3 size, 4-inch-deep pan
- Red tongs
- #8 disher
- Red perforated meat spatula
- Yellow solid spatula
Work Safe

Never run the microwave oven empty. This may cause a fire.
PREPARING
- Pancakes are prepared from a thawed state
- Pancakes can be held in the reach-in cooler, or one package can be stored in a 1/3 size, 4-inch-deep pan on the make-up table
- 1/3 size pan- Place a deli liner between each set of 2 pancakes- Use this liner to place the pancakes in the microwave
- Pancakes are cooked to order
FLAPJACKS WITH BACON OR SAUSAGE
- Place deli liner and 2 pancakes in the microwave.
- Spread pancakes slightly apart — do not stack directly on top of each other.
- Close the microwave door gently.
- Press Timer Button 5.
- When the timer sounds, remove the deli liner with pancakes.
- Flip pancakes from the liner onto a 9-inch plate (dine-in) or plain hinged container (dine-out). Discard liner.
- Using the squeeze bottle, apply 2/3 oz liquid margarine evenly over the pancakes.
- Use #8 disher to portion 2 eggs onto the plate or container.
- Add 2 slices of bacon or 1 sausage patty beside the eggs.
SERVING
- During breakfast, hold syrup packs in a 2” or 4” shallow pan in the heated display bin to keep them warm.
- Dine-in:
- Place plate on a serving tray.
- Add 1 syrup packets and a fork beside the plate.
- Dine-Out:
- Place the hinged container in a t-shirt bag.
- Add 1 syrup packets, 1 napkin, and a fork into the same t-shirt bag.
CLOSE OF BREAKFAST
- Serve all customers before cleaning.
- Clean inside of microwave with a clean, soapy towel.
- Wash, rinse, and sanitize the squeeze bottle; allow to air dry.
- Wipe down the workstation area with a sanitized towel.
- Cover remaining pancakes in the 1/3 pan, label “USE FIRST,” and store in the walk-in cooler.
- Sweep and mop the workstation area.
