Q.A. Standard

Tortillas should be completely thawed before serving. Wraps should be soft and moist. There should be no dry or hard areas on the wrap.

TOOLS NEEDED

1 oz. ladle#8 Disher
Biscuit splitterCutting board

WORKSAFE

  • Never run the microwave oven empty. This may cause a fire.

TORTILLAS

ROTATING AND THAWING

  • NEVER STORE CASE ON SIDE. STORE CASE FLAT.
  • During opening, rotate ONLY the next day’s product from the walk-in freezer to the walk-in cooler.
  • Tortillas must thaw for 24 hours prior to use.
  • When tortillas are rotated from the walk-in freezer to the walk-in cooler, use a sharpie marker to mark the package with:
  • Pulled By Date/Time: Date & Time the product is removed from the walk-in freezer
  • Ready By Date/Time: Exactly 24 hours from the pull by date and time
  • Use By Date/Time: End of Breakfast, the day following the Ready by date

Example:
Pulled by date/time: 9-22-25 4:00 A.M.
Ready by date/time: 9-23-25 4:00 A.M.
Use by date/time: 9-24-25 End of Breakfast

HOLDING

  • Remove tortillas from the walk-in cooler 1 hour before use so that they can reach a holding temperature of 50°F – 70°F.
  • Before use, flex the room temperature package of tortillas.
  • Tortillas must be held away from any heat source in their original bag.
  • Place 1 bag of tortillas into a ½ size 2’’ pan with lid.
  • Once the bag has been opened, be sure to seal the bag in-between uses to maintain product freshness.

AFTER BREAKFAST

After breakfast, any sealed/unused, thawed product can be placed back into the walk-in cooler for the next day’s use, if the product has not exceeded the use-by date marked on the package.

HOLDING HASHBROWNS

Hold hashbrowns in heat resistant pan under thermoglo.

PREPARING BIG COUNTRY BURRITOS

  • Pull down foil wrap. Ensure the word “special” is facing away from you.
  • Place a 10” floured tortilla on the center of the foil wrap.
  • Use 1 oz. ladle, portion sausage gravy about 1/3 from bottom of tortilla side to side.
  • Use #8 disher to evenly portion scrambled eggs over sausage gravy.

Preparing Sausage Wrap:

  • Bring down the cutting board and biscuit splitter. Use red tongs to place 1 sausage patty on the cutting board.
  • Use biscuit splitter to cut in half.
  • Place the 2-half pieces on top of scrambled eggs.

Preparing Bacon Wrap

  • Place 2 whole bacon slices on top of scrambled eggs.
  • Use brown tongs to place 5 hash browns evenly across sausage or bacon.

FOLDING BREAKFAST BURRITO – USE FOIL WRAP

  • With the product running horizontally, fold right and left sides into tortilla about 1/3 onto the mixture.
  • Fold the bottom of the tortilla to center (No product should be shown on sides or bottom).
  • Roll the tortilla bottom over the ingredients (Burrito appearance- No product showing).

WRAPPING BREAKFAST WRAPS – USE FOIL WRAP

  • Ensure the word “Special” is facing away from you. With the big country wrap diagonal (corner to corner) on center of wrap, fold the bottom left corner of the paper wrap about halfway up until it touches the tortilla.
  • Fold the top right corner of the paper wrap over until it touches the tortilla.
  • Fold the bottom right corner of the paper wrap up until it touches the bottom of the tortilla.
  • Roll up twice from bottom right corner to top left corner.

Use a sharpie to mark the burrito:

  • “S” for big country sausage burrito
  • “B” for big country bacon burrito
  • Prepared big country breakfast burritos can be held in the display in a ½ size 2’’ pan with wire grate for 1 hour if the meat temperature holds to at least 150°F.  
  • Use dissolvable label to mark 1 hour discard time.
  • No more than 6 burritos perc pan should be placed in the display at one time
  • During changeover, breakfast burritos are prepared to order

SERVING

One Breakfast Burrito (bacon or sausage)

  • Dine-in: Place 1 breakfast burrito on a serving tray with 2 napkins
  • Dine-out: Place one breakfast burrito in a 6lb bag with 2 napkins

Breakfast Burrito Combo (bacon or sausage)

  • Dine-in: Place 1 breakfast burrito on a serving tray with hashbrown and 2 napkins
  • Dine-out: Place 1 breakfast burrito in a 6lb bag with hashbrown and 2 napkins
