Q.A. Standard

Sausage dog- not broken – good reddish color.

TOOLS NEEDED

  • Knife
  • Warming pans for product holding cabinet
  • Solid lids for warming pans
  • Squeeze bottle
  • Red tongs
  • Cut resistant glove

Work Safe

  • Wash hands immediately after handling uncooked sausage dog.
  • Use caution when scraping the grill after cooking sausage dog to prevent splashing. The grease is extremely hot.
  • Sausage dogs must be stored below or away from all dairies, produce, and raw chicken when in the walk-in cooler.
  • Always wear mesh safety glove for all steps requiring use of a knife, tomato shark, or slice
  • Mesh safety glove should be washed, rinsed, and sanitized after each use

OPENING SAUSAGE DOGS

  • Ensure you are wearing single use gloves under the mesh safety glove
  • Put the mesh safety glove on your hand
  • Place a single use glove over the mesh safety glove
  • Hold package of sausage dogs with your gloved hand. Use knife to open.
  • Once a pack of sausage dogs is opened, transfer sausage dogs to a 1/3 size pan with lid.
  • Mark label withhold time. Place on lid.

ROTATING AND THAWING HOT DOG BUNS

  • Keep a bun tray from flowers for thawing
  • When buns are rotated from the walk-in freezer to dry storage, use a sharpie marker to mark a dissolvable label with the following information:
  • Pulled by Date/Time: Date & Time that it is removed from the walk-in freezer
  • Ready by Date/Time: Exactly 24 hours from the pulled by date & time
  • Use By Date/Time: 7 days from the pulled by date & time
  • Place dissolvable label on pack of hot dog buns

PREPARING AND HOLDING

  • Use Food Mitt Gloves
  • Place up to 10 sausage dogs into fry basket
  • Lower fry basket into the grease
  • Cook for 2 minutes and 30 seconds
  • When the final timer sounds, allow sausage dogs to drain over fryer 5 seconds.
  • Use red tongs to move up to 10 sausage dogs to warming pan
  • Place warming pan in mphc with solid lid
  • Set 1 hour hold time

CONECUH SAUSAGE DOG ASSEMBLY

  • Always wear single-use gloves when preparing sandwiches
  • Mustard will be held in squeeze bottle on makeup table at room temp
  • Prepared to order
  • Place bun(s) in MICROWAVE Press #1 for one bun Press #2 for two buns
  • Remove bun(s) from microwave
  • Using red tongs, place sausage dog(s) into the bun(s)
  • Use squeeze bottle to apply ¼ oz. mustard in a (zigzag pattern)

SERVING

One Conecuh Dog

  • Dine-in: Place 3lb food tray on serving tray with 2 napkins
  • Dine-out : Place 3lb food tray in a 6lb bag with 2 napkins

Two Conecuh Dogs and fries

  • Dine-in: Place 9” plate on serving tray 2 napkins
  • Dine-out: Place hinge container in a t-shirt bag with 2 napkins

Three Conecuh Dogs with fries and pie

  • Dine-in: Place 9” plate on serving tray with fry and pie and 2 napkins
  • Dine-out: Place hinge container in a t-shirt bag. Place fry and pie in a 6lb bag with 2 napkins

CONECUH CATERING

HALF DOZENDOZEN
Place a deli liner in the bottom of a 9-inch box.Place a deli liner in the bottom of a Family Chicken Box.
Place three Conecuh Dogs in the box (do not add mustard).Place six Conecuh Dogs in the box (do not add mustard).
Place a second deli liner over the first layer of Conecuh Dogs.Place a second deli liner over the first layer of Conecuh Dogs.
Place three additional Conecuh Dogs on top of the second deli liner (no mustard).Place six additional Conecuh Dogs on top of the second deli liner (no mustard).
Confirm the total count is six Conecuh Dogs.Confirm the total count is twelve Conecuh Dogs.
Close the 9-inch box and place it into a t-shirt bag.1. Close the Family Chicken Box and place it into a t-shirt bag.
Place six mustard packets and six napkins into a 6lb bag2. Place twelve mustard packets and twelve napkins into a 6lb bag

Key Notes:

  • Do not apply mustard to Conecuh Dogs; mustard is provided on the side only.
  • Use exactly two deli liners (one between layers).
  • Place dogs evenly in each layer to prevent shifting or crushing.
  • Verify total count is six or twelve before closing the box.
  • Ensure box is properly closed and secure before bagging.
  • Include mustard packets and napkins in the 6lb bag
  • Place 6lb bag in the t-shirt bag with the Conecuh Dogs
