Work Safe

- WASH HANDS: BEFORE STARTING WORK AND AFTER HANDLING ANYTHING NOT FOOD RELATED.
- GLOVES: ALWAYS WEAR GLOVES WHEN PREPARING READY-TO-EAT FOOD.
- CONECUH SAUSAGE COOK TEMP: CONECUH SAUSAGE MUST REACH 155°F FOR 17 SECONDS.
- HOLD TEMP: MAINTAIN COOKED PRODUCT AT 135°F OR ABOVE.
- EVERY 4 HOURS: WASH, RINSE, AND SANITIZE UTENSILS EVERY 4 HOURS.
- FOOD SAFETY IS EVERYONE’S RESPONSIBILITY. FOLLOW ALL WORKSAFE PROCEDURES.
Cooking & Holding
- Use Food Mitt Gloves
- Place up to 10 Conecuh sausage into fry basket
- Lower fry basket into the grease
- Press #5 timer to cook for 2 minutes and 30 seconds
- When the final timer sounds, allow sausage dogs to drain over fryer for 5 seconds.
- Use red tongs to move up to 10 Conecuh sausage to warming pan
- Conecuh go into the mphc pan whole. (DO NOT CUT PRIOR UNTIL READY TO SERVE)
- Place warming pan in mphc with solid lid
- Press timer to set 1 hour hold time
How to Cut Conecuh for Serving (Biscuits, Sandwiches, Sides & Plates)

- When Conecuh is ordered follow the steps below
- PLACE CONECUH ON THE CUTTING BOARD
- USING BISCUIT SPLITTER, CUT THE CONECUH IN HALF
- SPLIT EACH HALF DOWN THE CENTER LENGTHWISE
- FOLD OPEN EACH HALF AND PLACE ON THE BISCUIT OR SANDWICH
Conecuh Biscuit Assembly

- Always handle cooked Conecuh with red tongs
- Pull the biscuit wrap that has the word “Special” in the center
- Split biscuit in half using a biscuit splitter
- Use red tongs to place Conecuh on biscuit pan.
- Using biscuit splitter cut Conecuh in half horizontally, then split each half lengthwise.
- Using red tongs, place two half slices of Conecuh on the heel of the split biscuit
- Place the top of the biscuit on the two half slices of Conecuh.
- Wrap the biscuit using the corner-to-corner sandwich wrapping procedures
- Mark “CB” on the wrap using a sharpie marker

Serving
- Dine-in Single: Place Conecuh Biscuit on tray with 2 napkins
- Dine-in Combo: Place Conecuh Biscuit with hashbrowns on tray with two napkins
- Dine-out Single: Place Conecuh Biscuit in 6lb bag with 2 napkins
- Dine-out Combo: Place Conecuh Biscuit with hashbrowns in a 6lb bag with two napkins
- Side Order Dine In – Place 2 two half slices of Conecuh on a lined 3 lb. food tray
- Side Order Dine Out – Place 2 two half slices of Conecuh on a lined 3 lb. food tray and place in a 6 lb. bag with the logo facing up. Serve with a knife and a fork
- Side Meat Choice on Deluxe Breakfast Dine In – Place 2 half slices of Conecuh to the side of the scrambled eggs in the large section of the 3- compartment plate. Place it on the serving tray with a knife and a fork.
- Side Meat Choice on Deluxe Breakfast Dine Out – Place 2 half slices of Conecuh to the side of the scrambled eggs in the large section of the 3-compartment container. Cover with a deli liner. Place napkins, a fork, and a knife on top of the deli liner. Place the 3-compartment container in a t-shirt bag
Preparing Big Breakfast Sandwich with Conecuh Sausage

- Big breakfast sandwiches are prepared to order
- Always wear single-use gloves when preparing sandwiches
- When a sandwich is ordered, place 2 slices of Texas toast on the bun toaster chain to toast
- Pull down the foil wrap for a Breakfast Sandwich
- Ensure the word Special on the foil wrap is facing away from you
- Once toasted, remove one slice of Texas toast from the toaster
- Place the toasted side of the toast down in the center of the foil wrap & build the sandwich on the non-toasted side of the toast
- Using biscuit splitter cut Conecuh in half horizontally, then split each half lengthwise.
- Using red tongs place two half slices of Conecuh sausage onto the non-toasted side of the toast
- Place one slice of cheese on top of Conecuh sausage
- Using yellow tongs place one folded egg on top of the cheese
- Remove the 2nd slice of Texas toast from bun toaster & apply mayonnaise to the non-toasted side
- Apply condiments to all sandwiches in the following manner: Mayonnaise: Use a condiment spatula to place 3/4 oz. of mayonnaise on the toast using a down and across motion
- Place the slice of toast with mayonnaise on top of the folded egg
- Wrap the sandwich using the square wrapping method
- Using a sharpie, mark the foil wrap “CS” for Conecuh Sausage
